Our goal is to serve you with the freshest, locally-sourced ingredients in order to celebrate our region and each other. We want our food and drinks to be unique and beautiful without being pretentious, and for you to feel right at home.

Our coffee comes from local coffee roaster, Pilcrow Coffee. Roasted by Ryan Hoban, owner of both Interval and Pilcrow Coffee. Pilcrow Coffee is responsibly sourced from farmers all around the world. With a focus on relationships and strengthening community, Pilcrow coffee tells a story with all of us. Our coffee program will feature a lot of single origin micro lot coffees and some really amazing signature beverages.
Interval will feature a menu with ever-changing coffees giving people a choice ranging from a classic favorites to seasonal specialties.
Our food comes from local chef Travis Cook. Travis utilizes his experiences in the kitchens of Saison and French Laundry in San Francisco as well as his time at Ardent in Milwaukee to help bring an incredible amount of flavor and sensory experiences to you table side. Travis will bring an ever evolving seasonal menu of small plates for you to share with those closest to you. Our daytime program will feature classic cafe fare with intentionality, and nights will feature small plates with a sense of approachability in service.
Our drinks come from the combination of John Cunningham and Josiah Green. These two will glean from each other and execute a menu that is fun and challenging to the palate. Interval will feature a few signature cocktails that will rotate seasonally along with some off menu items for those whom are interested.
